Join us for a memorable 3-hour get-together in the magnificent Colorado foothills while you learn to cook up a batch of Colorado’s iconic Green Chili and Homemade Cornbread Then while it’s simmering, we’ll enjoy a glorious hike in Colorado’s one and only Red Rocks Park.

Depending on the group and  weather, our hike will be between 1-2 miles long through Red Rocks Park, but will be of easy-moderate difficulty with no intensive rock scrambling.

After the hike we’ll return to my house right up the canyon to enjoy our Chili, cornbread and some liquid refreshments with either homemade cookies or brownies as a sweet ending to our day together.  Remember to bring a hat, sunscreen, mask and water bottle (you can refill it here), and a small container to take home leftover any chili (if there is any!)

Join us, Thursday & Saturday mornings through early November and hopefully beyond...

We'll continue our Red Rocks hikes as long as the weather cooperates!

During Covid-19, please be sure to bring & wear a mask to class.

Which Food Is Colorado’s Most Iconic?

Winner Green Chili!

From CPR News, December 23, 2019

Philadelphia has the cheesesteak. New York can claim bagels and a pizza-style. They have barbeque in Kansas City. But, which food represents Colorado? It was a delicious competition...nearly 70 percent of all votes cast for the state's most iconic food were cast for green chili - in fact, they chose it over beer of all things!

Now, we also heard that green chili is a New Mexico thing, not a Colorado thing. Perhaps you've heard about the green chili feud between the two states?  Well, it doesn't really matter if it's New Mexico or Colorado...

One thing's for sure, you'd be hard-pressed to find green chili stew anywhere else in the country.

We'll meet in my mountain kitchen over brunch cocktails or coffee, put on some cookin' music, and get to know each other while we tweak our menu.

All of our produce is organic, our dairy grass-fed, and our fish wild-caught

We'll make a fabulous breakfast pastry - scones, biscuits, muffins or cinnamon buns - the choice is yours, and a full brunch to accompany it, chosen from several of our Colorado-centric brunch menus. The morning may find us smoking wild salmon, stuffing French toast, ironing some kind of delicious waffles or creating our own style "Evergreen" omelette - plus all the sides...the choice will be up to you!

Keep you fingers crossed that Colorado's fickle weather cooperates, so we can dine al fresco on the garden patio, otherwise we'll enjoy the mountain view from the dining room.  The high point of our day is always sharing and enjoying the fruits of our labor over some fresh squeezed juice and freshly brewed, local coffee.

Join us two Sunday mornings a month, October through Thanksgiving at 11:00 a.m.!

During Covid-19, please be sure to bring & wear a mask to class.
